The Ultimate Barbeque Marinade


Marinades have the ability to turn a bland piece of meat into something absolutely delicious. Creating your own marinade can be tricky as you need to get the correct balanced combination of flavour and spices.

It may be interesting to note that majority of marinades work well when you use an acid base. These could include vinegar, wine, lemon juice or fruits such as pineapple. The list can go on. The acid base softens the meat adding extra juicy flavours and tenderness.

Believe it or not but dairy products such as hung yoghurt and Greek yoghurt are used as traditional marinade in India. Yoghurt also enhances the tenderised meat as it contains mild acidity.

How to Make the Perfect BBQ Marinade

Ingredients To Tenderise The Meat

  • Ginger
  • Garlic paste
  • Raw papaya paste
  • Pinch of salt

Mix all the ingredients together to create your marinade. Rub the marinade on your piece of meat or fish and ensure that it is entirely covered. Now, leave it to rest for 40 minutes. This ensures that your meat will start to tenderise..

Making Your Marinade

All you need is:

  • Ginger
  • Garlic paste
  • Raw papaya paste
  • Salt
  • Lemon juice
  • Roasted & powered spices to taste
  • Greek yoghurt
  • Dry red crushed chilli
  • Mustard oil
  • Mustard paste
  • Mint sauce

Mix well and let it run over your meat or fish once more. Leave it to rest for an hour before grilling. High temperatures work well with marinades.
